Goodside Pastry House · Victoria, BC
Haley and Curtis met in culinary school fourteen years ago. They spent a decade in Vancouver's most demanding kitchens. They came to Victoria for community. You've been lining up on Fort Street ever since.
The Story
After a decade running the stations in Vancouver's high-pressure kitchens, Haley Landa and Curtis Helm arrived in Victoria in 2020 with one goal: to build something that belonged to a neighborhood, not a dining trend.
Their flour is organic. Their eggs are from Lockwood Farms. Every month, they throw out the menu and start again — not because the old one wasn't good, but because staying creative is how they stay honest.
Every Month
Curtis Helm, co-owner. Every month they throw out what worked and build something new. Not because the old menu wasn't good — because staying creative is the whole point. This is what it looks like when two chefs who love cooking keep cooking for the love of it.
The Bakes
The one that started the line. Organic flour, Lockwood Farms eggs, properly laminated. It's the baseline — and it's as good as any you'd find in a Paris arrondissement.
Passionfruit brioche bombs. Lychee-raspberry cheesecake mousse. Coffee and dulcey tarts. Whatever's on the website right now is this month's menu. Next month it won't exist.
4" cakes (serves 2–3) from $21. 6" cakes (serves 6–8) and up. Order through the website — same French technique, just with your occasion in mind.
